Amino acids are organic acids containing amino acids, which
constitute the basic units of proteins. Colorless crystal, high
melting point (above 200 ℃), soluble in water, with amphoteric
ionization characteristics, and sensitive color reaction with
ninhydrin reagent. In 1820, glycine with the simplest structure was
found in the hydrolysate of protein. By 1940, about 20 kinds of
amino acids had been found in nature. They are necessary for the
synthesis of proteins by human body or animals, and most of them
